I am a Pour Over Coffee Dripper. Have patience, it’ll be worth the wait.
A while ago, but not too long as the moment is still clear in my memory, we converted to making manual pour over coffee at home instead of with machines or other methods. It may have had something to do with our increasingly frequent travels to Japan but we began to embrace a new form of coffee making popular in Tokyo, which up until around 2010, hadn’t yet made it to American third wave coffee shops. It was something about the mastery of technique and the ceremonious manner of preparing a pour over coffee by hand that actually made it more enjoyable. The focus became on the craft behind the brewing process and the taste of the coffee was better as a result. In any case, our first pour over coffee maker was this one by Tetsuya Otani. We still have it and it’s aging beautifully with each brew.
