It’s very exciting to have a donabe be a part of the award winning line of cookware, Ambai, designed by Makoto Koizumi. These earthenware pots have been used in Japanese cooking for centuries, with special properties ideal for even heat distribution and one-pot meals. Koizumi-san refines the traditional cooking vessel into a modern piece with clean lines and a simpler shape. The donabe comes with both a ceramic top and a circular lid of sawara cypress that looks beautiful against the subtle textured white glaze. The wooden lid is reminiscent of the Wood Drop Lid and is great for infusing deep flavor. As usual, Koizumi-san designs to improve the user experience – the interior of the donabe is marked with lines to indicate the correct water level for different amounts of rice. A piece that draws from the best of tradition and brings it into modern times!
