I am a Wagashi Knife. I actually think quite highly of dessert, but I just can't help but cut them down to size.
Wagashi, or traditional Japanese confections, are often quite delicate in flavour and texture, so to cut one to share requires a thin and precise knife to keep its structure. This beautiful hand-forged knife is made with the soft and sometimes sticky texture of wagashi in mind, featuring a thin blade that makes clean and precise slices with ease. We love how the gentle curve and length of the blade cuts an elegant shape on a table setting. While the knife is often presented with dessert, we also love to use it for cheese and charcuterie when hosting friends for wine.
