Washoku, which was recently registered for the UNESCO Intangible Cultural Heritages Program, is renowned for its transient beauty and use of natural ingredients, refined techniques and spatial sense. In this book, Ogata-san looks at the modern and innovative, yet highly traditional, aesthetic of washoku.
