  I am Matcha No. 1-30 – Kagoshima. Southern warmth, deep and sure of itself.

   

• Curator's Notes 

  I’ve fallen in love with Saboe teas, so it’s no surprise their powder matcha is a favorite. Matcha No. 1-32 from Kyoto has that rich, smooth Uji character I could drink every day. No. 1-31 from Fukuoka is bright and fresh, the kind that wakes you up in the best way. No. 1-30 from Kagoshima is rounder and more robust, perfect for when you want something with a little more umami and weight. I rotate between them depending on the day, but they all remind me why I trust Saboe for every tea in my cupboard.

  • A rare organic matcha with a deep, savory umami and a crisp finish, perfectly balanced between sweetness and astringency
    
  • Made from tencha leaves, carefully shaded before harvest and left to mature through the summer for a richer, more developed flavor
    
  • Finely ground using a traditional stone mill for a smooth, frothy finish
    
  • To prepare, sift about 2 grams of matcha (roughly two scoops with a chashaku ladle) into a matcha bowl, add 75ml of water heated to 80°C, and whisk with a chasen whisk until the surface is covered with a smooth, frothy foam
