I am Shio Okaki Rice Crackers. Made by hand from sliced mochi that is sliced one by one, and then placed on a charcoal fire, lightly salted… yum!
We tried these crackers for the first time in Kyoto with tea and got hooked! We knew immediately we needed to carry them – not just to share with clients, but also to have an endless supply for ourselves! They are hand made by one man, who produces them in a traditional way, before food companies started to use big factory machines. He first makes the mochi rice cakes in a stone mortar with a wood pestle. Then he cuts the mochi into thin slices and lets them dry in the sun and air. Afterwards they are roasted by hand, ten slices at a time.
This pack is lightly flavoured with coarse salt (shio). It has a hint of sweetness from the rice and is well suited alongside tea.
